Sourced from a high-quality, hand-farmed site in Gruyere, MV6 fruit was hand-picked and triaged on a sorting table, with 20% retained as whole bunches while the remaining fruit was gently crushed and destemmed. Whole bunches were laid at the bottom of small, open-top stainless-steel vessels and covered with whole berry fruit to promote carbonic maceration effects. Fermentation occurred gradually with indigenous yeasts. After pressing, the wine was transferred by gravity to barrel for maturation in a mix of French oak barriques (25% new) for 12 months. No fining or filtration.

The nose is dense and intensely perfumed with black cherries, plums and rose florals layered with notes of baking spice, char and gravel minerality that peek through the fruit. This layered aromatic evolution is reflected on the palate and hangs upon fine-boned structure of body, bright acidity and soft, silky tannins. Lithe and lively on the palate, flavours of black cherry and oak spice persists on the finish, a hallmark of Pimpernel’s signature length and depth.
