The nose is dense and intensely perfumed with black cherries, plums and violet florals layered with notes of baking spice, char and gravel minerality. This layered aromatic evolution is reflected on the palate, complemented by mouth filling body, bright acidity and soft, silky tannins. Flavours of black cherry and oak spice persists on the finish, a hallmark of Pimpernel’s signature length and depth. A well-balanced wine with an elegance and concentration that will continue to evolve over the next 5 years.
Winemaking
MV6 fruit was lightly crushed and transferred to small, open-top fermenters. Whole berries underwent a 3-day presoak to encourage bright fruit expression with a rounded textural mouthfeel. Vats were regularly plunged during the active portion of their fermentation. After fermentation, individual ferments were basket-pressed and transferred by gravity to barrel for maturation in a mix of French oak barriques (20% new) for 12 months. No fining or filtration.
